Spaghetti Carbonara
600G spaghetto
6 rashers bacon
180g cheese spread
2 egg yolks
3 stalks parsley leaves chopped
300ml vegetable stock
Grated parmesan
While the pasta is cooking in a saucepan of water fry the bacon pieces in a large pan, add the vegetable stock and let the mixture simmer for a few minutes.
Beat together the cheese spread and the egg yolks in a bowl.
When the pasta is cooked drain off the water. Add the bacon and stir. Add the cheese spread and egg mixture and stir thoroughly.
Place the mixture in serving bowls and sprinkle the parsley and parmesan over the tops.
